Health info and recipes

Well how are you all doing so far this summer.I have been out of circulation lately.we have been going through some struggles so I have not felt like writing ,but I know God is so much bigger than any thing we can face so I am done worrying.We have had a pretty good summer for the most part.The kids have been living in the pool so they are getting very brown.I will have to send some pics later.Tomorrow we are going to the zoo.It is their annual free day and they have a lot of festivities going for the kids and they always love it.On a health note,yesterday I was studying on my vitamins and what they are all for and such and I learned some very interesting facts about B-12 that I never knew.There are 2 kinds and one[cyanocobalamin] does little more than feed the parasites.The one we need and that we can actually absorb is called methylcobalamin.The first one is typically what is in most health stores and the most that can be absorbed is 3%.This vitamin is very important for nerve health,digestion,anemia blood and energy to name a few,but most people do not have enough good bacteria to absorb or make b-12.What you want is sublingual methylcobalamin.ANYTHING less than that is just wasting your money and can actually make your situayion worse.Here is a place you can get a good source.http://www.vitaminlady.com/Vitamin_Research_Products/Methylcobalamin_Drops.aspAnother interesting note about B-12 is that if babies are given it at birth it can prevent them from having allergies because it saves them from adrenal stress from the birth process.Well on to other things as this is kind of a hodge podge night,I came up with a healthy delicious ice cream recipe that was low dairy and very creamy.The kids loved it,I still reacted a little to it because I am so dairy sensitive that I can't even have a little unless it is kefir.I am devoting a whole post on the wonders of kefir soon.The recipe for the ice cream[which I will have recipes for entirely dairy free later]

CHOCOLATE PEANUT BUTTER ICE CREAM

3 cups soy milk,1/4 cup agave nectar,2 egg yolks,3/4 cup plain yogurt,1/2 cup half and half,1/4 cup peanut butter and 1/2 or 1/3 cup chocolate protein powder

whip all together and chill before pouring in your ice cream freezer.It takes 20 min or so and if you want it harder transfer to your freezer for a little while ,rich and creamy

THAI PEANUT SAUCE

In a blender put 1/4 cup peanut b utter 1 tbsp soy sauce,1 tbsp vinegar,1 tbsp sesame oil,2 tbsphoney,1 tsp fish sauce,1/2 tsp ginger,1/2 tsp cayenne,puree in blender and gradually drizzle in about 1/2 cup safflower oil[or any you like] this is delicious over salads with chicken or steak and slivered almonds with some kind of fruit for an aisian salad,or stir it into spaghetti noodles with meat and stir fry veggies for a deliciuos thai noodle dish

COCONUT MACAROONS HEALTHY STYLE

2AND1/2 CUP UNSWEETENED COCONUT[SHREDDED],1/3 CUP WHOLE WHEAT PASTRY FLOUR,1/4 TSP SALT,1/4 CUP BROWN RICE SYRUP,AGAVE,OR MAPLE SYRUP OR HONEY

1/4 CUP MAPLE SYRUP[ADDITIONAL TO ABOVE]

1 TSP ALMOND EXTRACT 1/3 CUP WATER[MAYBE MORE IF NEEDED]PREHEAT OVENTO 350 MIX DRY INGREDIENTS.IN ANOTHER BOWL,WHISK WET INGREDIENTS TOGETHER,THEN ADD TO DRY AND MIX WELL.WITH MOIST FINGERS,SQUEEZE 1 INCH BALLS OF DOUGH.BAKE TILL GOLDEN ABOUT 20 MIN.PUT ON PARCHMEBT PAPER BECAUSE THEY LIKE TO STICK.YOU CAN ALSO ADD CHOCOLATE CHIPS OR NUTS IF YOU WANT.
