Busy days and new recipes

Hi,how are you all?I am doing good.Things have definately been busy lately.I had a wonderful trip to Ohio recently to see my sister Kat who had a baby boy.What a beautiful child,his sister is gorgeous too,but you should see the parents.Is it any wonder?Anyway if you want to see pictures my sister has them on her blog at photomamacreations.blogspot.com.I took tinkerbell with me as I knew it would be hard on her if I was gone.I haven't been away too often and I thought it would give us some quality time together.We have plans for the other two to have their turn as well.She had a great time.We rented a hotel room and got to soak in the hot tub and swim mornings and evenings and during the day we hung out at the hospital.Since we have been back it has been a whirlwind of business.It seems my work is self replicating and time just disappears.I realized how long it has been since I have posted,so I am making some time tonight.Princess has been accepted to youth college for a few weeks this summer,so we are really proud of that.She is too.I am really proud of the way my kids are turning out.I am thankful the Lord is always looking out for them.My husband has been working from the time the kids get home from school till 2:00 in the morning so they don't see him much lately and I can tell that is taking its toll,but he should be getting a shift change soon.I can't wait ,I am tired of going to bed with the dog.I have been learning different types of healthy cooking and raw foods lately.Some good,some not so good.I will post the good ones.One thing I have learned is I am not cut out for an all raw vegetarian diet.bleh!But we do need to eat more raw than what we do.There are several recipes I am going to post.The first one sounds weird but is so good my kids and the neighbor girl were licking their plates,they enjoyed it so much.It is loaded with healthy fats and minerals.
avacodo lemon tart[recipe one]
3 avacodos,1/4 cup lemon juice,or juice of one lemon
1 tsp lemon zest,1/4 cup agave nectar,maple syrup or honey[you can add more if it is not sweet enough for you]1 tsp vanilla
Put in blender till creamy and fluffy,then pour into graham cracker crust and serve with fresh kiwi and strawberries.DELICIOUS
You can also layer with fruit in dessert dishes for a parfait,and if you want to make it a key lime mousse just substitute limes for the lemon
AVACODO CHOCOLATE MOUSSE[recipe two]
3avacodos,1/2 cup cocoa,1/4 cup whole pitted dates that have been soaked a few hours
1/3 cup agave nectar,maple syrup or honey or sweeten according to taste
1 tsp vanilla
put in blender and puree,serve in dessert dishes with whipped cream
HEALTHY PEANUT BUTTER BALLS[recipe three]
1 cup peanut butter,1cup honey,1cup powdered milk
1/4 cup flax meal,1/2 cup almond meal or ground sunflower seeds
mix together till stiff, if to moist add ground oats,you can also substitute the powdered milk for any of the dry ingredients if allergic to dairy.Also you can use almond or cashew butter instead of peanut butter,I always add a 1/4 cup tahini as well because it gives it a lot of calcium,but if you don't like it you can leave it out.
1/2 cup raisins,1,2 cup carob chips, mix in and roll in tight balls.THEY STAY FRESH STORED IN THE FRIDGE AND ARE GREAT FOR PREVENTING LOW BLOOD SUGAR,IF YOU ARE DIABETIC USE AGAVE NECTAR INSTEAD OF HONEY.THE KIDS LOVE THEM
AT CHRISTMAS I DIP THEM IN BITTERSWEET BAKING CHOCOLATE YUM
RAW GLUTEN-FREE BROWNIES[RECIPE FOUR]
2 CUPS WALNUTS SOAKED IN WATER OVERNIGHT[DRAIN BEFORE PROCESSING]
1/2 CUP PITTED DATES SOAKED[DRAIN BEFORE PROCESING]
1/3 CUP COCOA[YOU CAN ADD MORE IF YOU WANT IT REALLY RICH]
1/4 CUP LIQUID SWEETENER SUCH AS AGAVE
1 TSP VANILLA
3/4 CUP DRIED CHERRIES OR CHERRY FLAVORED CRAISINS
PUT IN FOOD PROCESSOR TILL FINALLY GROUND AND PAT INTO A CAKE PAN ,CHILL THEY ARE BETTER AFTER THE FLAVORS HAVE HAD TIME TO MELD TOGETHER
